Three simple ingredients transforms a piece of Salmon Trout into a great supper dish. I used a 130g piece of fish and served it with 250g of steamed vegetables (no potatoes) and it totalled 300 calories.
What you do:
- Mix a heaped teaspoon of marmalade, half a teaspoon of cumin powder and squeeze of lime juice together.
- Spoon over a piece of Salmon Trout (or any large flaked fish like regular salmon, cod, haddock or hake) and season.
- Wrap in baking parchment and bake at 200c for 15 minutes if fresh or 175c for 30 minutes if the fish is frozen.
- Serve with steamed vegetables with the juices poured over the top.
